Prepare Your Surface: Clear a clean, flat surface. My challah dough recipe should not be sticky - there is no need to place flour down on the surface.

Flatten and Fold: Place the dough onto the surface and gently flatten it with your palms. Fold the dough in half towards you.
Push and Rotate: Push the dough away from you with the heel of your hand, using your body weight to apply even pressure. Rotate the dough a quarter turn and fold it in half again. Repeat this motion.
Keep It Going: Continue pushing, rotating, and folding the dough for about 10 minutes. The dough will become smoother and more elastic as you work it.
Test for Readiness: To check if the dough is ready, perform the "windowpane test." Gently stretch a small piece of dough between your fingers. If it stretches thin enough to let light shine through without tearing, it's ready.

Rest and Rise: Shape the dough into a ball Cover it with a cloth and let it rest for about 1 hours, or until it has doubled in size.
