Eggplant Parm Meatballs
Ingredients
- 2 medium eggplants
- 2 tablespoons of olive oil
- ½ cup of breadcrumbs
- 1 egg
- 1 tablespoon of salt
- ½ tablespoon of pepper
- 1 tablespoon of garlic powder
- 24 oz tomato sauce or marinara sauce
- 8 oz fresh mozzarella cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Start by peeling the eggplants and dicing them into small, uniform pieces. This will ensure even cooking and consistent texture.
- Coat the diced eggplants in olive oil, making sure each piece is well coated.
- Place the eggplant pieces on a baking sheet and bake them in the preheated oven for approximately 20 minutes. Keep a close eye on them to ensure they become tender.
- Once the eggplant is baked, carefully transfer the cooked eggplant pieces to a food processor. Pulse the eggplant until it is finely chopped.
- In a mixing bowl, combine the finely chopped eggplant with breadcrumbs, egg, salt, pepper, and garlic powder. Mix the ingredients well until they are thoroughly combined. This will create a cohesive mixture that holds together when forming the eggplant balls.
- Line a baking pan with a layer of sauce, evenly spreading it across the bottom of the pan. This creates a flavorful base for the eggplant balls to cook in and ensures they don't stick to the pan.
- Using a 2-inch ice cream scooper or your hands, shape the eggplant mixture into evenly sized balls. Place each ball on the lined baking pan, on top of the layer of sauce. Arrange them in a single layer, allowing enough space between each ball for even cooking. The mixture should make around 12 eggplant parmesan balls.
- Pour the remaining sauce over the eggplant balls, ensuring they are all generously coated.
- Place slices of fresh mozzarella cheese on top of each eggplant ball.
- Cover the baking pan with foil and bake the dish in the preheated oven for approximately 30 minutes. The covered baking time helps the flavors meld together and ensures the eggplant balls cook through.
- After the initial 30 minutes, remove the foil to uncover the dish. Switch the oven setting to broil and continue baking for an additional 5-10 minutes, or until the cheese on top turns crispy and golden brown. Keep a close eye during the broiling process to prevent burning.
- Once the cheese is crispy and the eggplant balls are cooked to perfection, remove the pan from the oven. Allow the dish to rest for a few minutes to set and cool slightly before serving.
